A Taste of Summer
48 hours among the verdant hills of the Hockley Valley Resort
The first signs of summer in Hockley Valley arrive quietly — the delicate blossoms of trees unfurl in the warm breeze, bees flit between wildflowers, and tiny green shoots push through the rich earth of Hockley Valley Resort’s two-acre organic garden.
This garden, the beating heart of the resort’s culinary experience, is the first glimpse of the indulgence that awaits — where food is not just a meal, but a connection to the land, where relaxation is woven into the rhythms of nature, and where time slows just enough to savour every moment.
Hockley Valley Resort is a 4-season, full-service retreat set on 300 scenic acres at the edge of the Niagara Escarpment. If you're looking for a summer getaway that close to Toronto but feels like a world away, this one ticks off all the right boxes.
Here's how to spend an indulgent 48 hours at Hockley Valley Resort.

Day One
4:00 pm — Arrive at Hockley Valley Resort
Located just an hour from Toronto, near Orangeville, Hockley Valley Resort has 108 guest rooms of various configurations, from studio to executive suites.
After checking into your room, take a walk through the aromatic gardens. Enjoy a drink on the patio at Babbo, which offers seasonal cocktails, an extensive wine list and a large selection of craft beer. Try the Negroni Spagliatto, made with prosecco, for a refreshing start to your indulgent getaway.

6:00 pm — Dinner reservations at cabin
Get ready for a unique culinary experience at cabin, where local ingredients and global flavours merge.
Chefs gather about 80% of the herbs and vegetables needed for the menu from the onsite garden; the rest of the ingredients are sourced as local as possible.
That freshness comes through in the elevated dining experience at cabin, one of the onsite restaurants.
Here the menu changes with the availability and seasonality of food but you can expect to see a selection of antipasto, fresh hand-made pasta and well balanced meat dishes.

Day Two
8:00 am — Breakfast in bed
The ultimate indulgence is breakfast in bed and Hockley Valley Resort delivers a decadent experience with freshly brewed coffee and a delectable selection of breakfast items available for in-room dining.
Try the Buttermilk Pancake Stack with maple syrup, whipped cream, and Ontario mixed berry compote or one of the farm-fresh omelettes.

10:00 am — Indulge in a visit to the Spa
The spa at Hockley Valley Resort is 8,000 sq feet of pure bliss. It includes multiple treatment rooms, a retail boutique, and a lounge and patio. Choose from services such as massage therapy, reflexology, body treatments, manicures and facials. The Warm Healing Stone treatment, during which heated stones are placed on key parts of the body to maximize relaxation, is pure bliss.
The Hockley Valley Resort also has an indoor pool and hot tub for relaxation. You can stay in your spa robe as you enjoy a healthy and delicious lunch on the Babbo patio.

The course is designed to meld artfully with the surrounding green hills so a truly immersive experience.

Day Three
8:00 am - Nature Therapy
Get an early start to the day with a nourishing breakfast in bed and then head outdoors to spend time in the surrounding natural beauty of the Hockley Valley Resort.
The Hockley Valley is part of the Niagara Escarpment, a landscape shaped over millions of years by erosion. It extends from western New York state all the way to the Bruce Peninsula and Manitoulin Island. In the Hockley Valley, the escarpment is more than just a backdrop—it is an invitation to explore.
For those looking to stretch their legs, the surrounding trails weave through forested moraines, past wild meadows buzzing with life, and along the river’s edge, where wildlife thrives. White-tailed deer move silently through the trees, red-tailed hawks soar overhead, and the rustling leaves provide a soundtrack to the journey.
For experienced mountain bikers, the resort's onsite trails offer an exhilarating ride through rugged terrain, twisting through the trees and over rolling hills. It’s a chance to push limits, to feel the rush of wind and the thrill of movement in one of Ontario’s prettiest landscapes.

1:00 pm - Adamo Estate Winery
After checking out from the Hockley Valley Resort, head 1 km up the road to the resort's sister property, the beautiful Adamo Estate Winery.
This 18-acre vineyard grows some 23,000 vines in three blocks with a focus on cool-climate varietals such as Chardonnay and Pinot Noir. The centrepiece of the property is a gorgeous stone building with the red door that houses the store, restaurant and tasting room.
Book a tour of the property, settle in for a wine tasting, and get to know the history of this gorgeous destination.
Adamo Estate Winery is part of an emerging region of winemaking, with a commitment to respect the environment, climate and region through sustainable farming practices.
Enjoy lunch on the expansive patio before heading home.
As you leave the hilltop winery, you'll have a perfect view of the surrounding countryside, which is the essence of this region.
